Our partner’s recipe: Autumn chicken with Thai flavours

The parents of Roxane Lalieux, Corporate Sales Director & Tour and travel at Croisières AML, are avid travellers and gave her the opportunity to discover many flavours in her youth. Because of this, she appreciates recipes that mix seasonal products with a touch of exotic inspiration.

Ingredients

For 2 or 3 people

  • 300 g chicken cut into cubes
  • Olive oil
  • 300 g squash cut into 1 cm cubes
  • 200 g sweet potatoes cut into 1 cm cubes
  • 1 clove of garlic
  • 1 or 2 onions
  • 200 ml coconut milk
  • 40 ml coconut cream
  • 1 tbsp. soy sauce
  • 1 tsp. chili powder
  • 150 ml water or broth
  • Cilantro and/or basil
  • Salt and pepper

Preparation

  • Cook the chicken cubes in a large pan over high heat with salt, pepper and a little bit of olive oil.
  • Reduce heat and gradually add squash, sweet potatoes, garlic, peeled and chopped onion, and remaining ingredients (except water and herbs).
  • Stir then add water, cover and simmer for at least 30 minutes.
  • Serve with herbs.
