Our partner’s recipe: Peanut butter cookies

Christmas was always an important time for the family of Patrick Guay, Account Executive at Québec City Business Destination. Both when he was a kid but also when he had his own family. One of his favorite recipes is this peanut butter cookie recipe that his wife, Josée, always makes for Christmas.

Imagine Josée’s concern when she saw a few cookies missing and Paulo, their lab, was lying under the tree. Paulo had a severe peanut allergy. Is it possible? It turned out that the cookie monster had had a few cookies before going to bed with Pat’s son Jeremy. All was good! Fortunately, everything ended well.

Ingredients

  • 125 ml peanut butter
  • 125 ml softened margarine
  • 125 ml white sugar
  • 125 ml brown sugar
  • 1 egg
  • 250 ml all-purpose flour
  • 5 ml baking soda
  • 1 ml salt
  • 2 ml cinnamon

Preparation

  • In a large bowl using a wood spoon, cream together the first 5 listed ingredients.
  • Sift the other 4 dry ingredients together and add to the creamed mixture. Stir until blended.
  • Using a teaspoon, drop the dough onto a lightly greased baking sheet. Using a floured fork, flatten each dough drop.
  • Bake in a 350°F oven’s top shelf for 5-10 minutes.
